Mediterranean Chicken Salad w/ Artichoke Hearts

Ingredients

  • 3 oz skinless boneless chicken breast – coarsely chopped (or 1/3 cup leftover)
  • 1 1/2 tsp olive oil – divided
  • 1 tbsp capers – chopped
  • 1 tsp garlic – minced
  • 1 tbsp balsamic vinegar
  • 1/8 tsp chili powder
  • salt and pepper – to taste
  • 1 tbsp fresh basil – chopped (or 1 tsp dried)
  • 1 tbsp fresh parsley – chopped (or 1 tsp dried)
  • 2 artichoke hearts, canned, quartered
  • 1/2 cup asparagus – 1-inch pieces
  • 1/4 cup onion – chopped
  • 1/4 cup red bell pepper – chopped
  • 1/4 cup celery – sliced
  • 1 cup romaine lettuce – torn
  • 1 cup Olivia’s Organics herb salad – or spring mix
  • 1/4 cup garbanzo beans canned
  • 1/3 cup tomatoes – chopped
  • 1/2 cup raspberries

Instructions

In a medium sauté pan, sauté chicken in 1/2 teaspoon oil. Place remaining oil, capers, garlic, vinegar, and herbs and spices in a small bowl. Whisk to blend for dressing. In medium bowl combine artichokes, asparagus, onion, pepper, celery and chicken. In a salad bowl combine the romaine, herb salad mix, garbanzo beans, and tomatoes. Pour dressing over salad and toss gently to coat. Top with chicken mixture and serve. Enjoy raspberries for dessert.
